  14. Drizzle the egg over the hot grill and cover the top of the pork belly with a slice.
  15. Cook for 5 minutes, turning slightly under the shoulder blade if possible. Cook for another 5 minutes, then flip again. Don't push the damn thing.
  16. Top with plenty of sauce, tuna flakes and sprinkle with anori seaweed powder, that's it. Add mayonnaise or Japanese mustard to taste!
