  9. 1 large onion, chopped
  10. 2 carrots, cut into 1/4 thick slices
  11. 1 tablespoon tomato paste
  12. Crush, mince and mince 3 garlic cloves
  13. 1 glass of sherry
  14. 1 cup beef stock
  15. 2 medium waxy potatoes, peeled and cut into 1/4-inch slices
  16. 1 tablespoon chopped fresh rosemary
  17. 1 tablespoon chopped fresh thyme
  18. 1 handful green beans, halved
  19. 1/4 cup capers
  20. 1 teaspoon of starch

Instructions for preparing stewed veal leg

  1. Generously salt the bones and fry them in a large pot over high heat with a drizzle of vegetable oil. When the legs are golden brown on both sides, add enough cold water to cover. Add ½ cup garlic, celery, carrot, bay leaf, thyme sprig, and pepper. Cover and bring to a boil. Reduce heat to medium and simmer for 2 1/2 hours. Periodically remove accumulated grease and dirt from the surface.
  2. Remove the bones and set aside to cool. Filter the solder through a colander lined with a coffee filter.
  3. Add butter to a medium saucepan over medium heat. Add chopped onion and carrot and fry for 2 minutes. Add the tomato paste and minced garlic and continue to cook for another 2 minutes. Glaze the sherry pot and boil until about 3/4 of the sherry has evaporated.
  4. Remove the meat and marrow from the thighs and add to the pot with the filtered roasting liquid, beef stock, potatoes, rosemary and thyme. Let it simmer for 30 minutes. Add the beans and capers and simmer for a further 5 minutes.
  5. Make a suspension by adding a little water and cornstarch to a bowl. Beat until smooth. Beat the milk in a saucepan and simmer the stew for the last 5 minutes. Add salt and pepper as needed before serving.
