Dal baati churma, this three -in-one treat is a typical Rajasthani treat. The Rajasthanis specialise in serving sweet & savoury dishes in combinations that steal the heart and delight the taste buds.
A platter of semi sweet churma, spicy dal and baati,is one such traditional combination. Fresh baatis drowned in pipping hot dal is a perfect accompaniment for churma.

Ingredients and spices that need to be Get to make Dal Baati:

  1. Baati :
  2. 2 cup wheat flour
  3. 1/4 cup ghee
  4. Salt as per taste
  5. as needed Water
  6. 2 tbsp tovar dal
  7. For Dal :
  8. 2 tbsp split black lentils (urad dal)
  9. 2 tbsp split bengal gram(chanadal)
  10. 2 tbsp masoor dal
  11. 1/2 cup split green gram with skin
  12. 1/4 tsp Turmeric
  13. to taste Salt
  14. For Dal tempering :
  15. 2 tbsp ghee
  16. 1/2 tbsp cumin (jeera)
  17. 1 pinch asafoetida
  18. 1 tbsp garlic chopped
  19. 1/2 cup onion chopped
  20. 1/2 cup tomatoes chopped
  21. 1/2 tsp turmeric powder
  22. 2 tsp red chilli powder
  23. 1 green chilli chopped
  24. 1 tbsp coriander powder
  25. Salt as per taste
  26. 2 tbsp coriander leaves
  27. For churma :
  28. 2 tbsp ghee
  29. 2 baati crushed into coarse powder
  30. 2 tbsp almond chopped
  31. 3 cardmom pods
  32. 3 tbsp powdered sugar (or as per ur taste)

Steps to make to make Dal Baati

  1. Soak all dals for 30 mins
  2. Wash & drain dals and keep aside
  3. In a cooker, Add all dals,turmeric, salt and enough water & give 2 whistles
  4. After 2 whistle switch off the flame
  5. For tempering dal : Heat a wok add ghee and once the ghee heats, add garlic, asafoetida, saute then for few seconds.add onions add saute till raw smell goes away.
  6. Next add green chilles, red chilli powder, turmeric, coriander powder, salt and give it a mix
  7. Add tomatoes, boiled dals mix well then add coriander leaves, give it a stir and ur dal is ready
  8. For Baati : In a bowl add wheat flour, salt, melted ghee
  9. Mix them nicely till the texture of flour resembles bread crumbs
  10. Add little water & knead it into a stiff dough
  11. Once the dough is ready divide it into portions.
  12. Make cross sign on the dough ball and next step is to bring it together
  13. Tip : do nt press it too hard or leave it loose
  14. Bake the baatis in gas burner, keep flipping them & ensure they don't burn
  15. Churma : crush few baatis and transfer them in a grinder jar, crush it into coarse powder
  16. Heat a pan add ghee, cardmom pods, chopped almonds
  17. Saute them till it's nice and fragrant
  18. Ensure thtthey do not change colour
  19. After few seconds add crushed baatis
  20. Saute them on medium flame for 5 mins & transfer them it into bowl
  21. Allow mixture to cool down
  22. And then add powdered sugar. Mix well
  23. Our dal baati churma is ready
  24. Pour hot dal & ghee over the baatis
  25. Serve hot with churma
